Health benefits of cinnamon
Cinnamon is one of the oldest spices. However, there are two types of cinnamon “orginal” cinnamon and cassia cinnamon. Orginal cinnamon can be found in the form of bars, and has a stronger flavor and therefore is used as a spice for flavorings. Another type of cinnamon or cassia cinnamon has a slightly milder flavor and is sold in powder form. Because distributional patterns the most common form being sold is cassia cinnamon. The problem with cassia cinnamon is that it may contain a greater amount of coumarin which can damage the liver and kidneys. [9,10]German Federal Institute for Risk Assessment recommended that the tolerant dose of coumarin is about 0.1 mg per kilogram of body weight. Also according to data from the same institute 1 kilogram cassia cinnamon contains 2.1 to 4.4 grams of coumarin. If for example we take 3 grams of cassia cinnamon,with simple mathematical formula we gonna get that if we consume 3 grams of cassia cinnamon we will consume 5.8 to 12.1 milligrams of coumarin. If we compare the 5.8 milligrams to 0.1 milligrams per kilogram of body weight in a person who weight 70 kilograms we will get that the he is consuming 7 milligrams which means that consuming 3 grams of cassia cinnamon could be toxic only for people who weight less than 60 kilograms. The European Union has a regulation which restricts the content of coumarin in cassia cinnamon. The cassia cinnamon should not contain more than 50 mg coumarin per kilogram, or no more than 20 mg coumarin per kilogram in ready made food for breakfast (muesli, etc.) and not more than 15 mg coumarin per kilogram when it comes to baking. But research conducted in Denmark show that rolls usually contain more than recommended dose of 15 mg coumarin per kilogram of cinnamon in baked products.  Conclusion If you can choose your type of cinnamon always choose the one with label Cinnamomum verum or organic one.There is no need to consume large amounts of cinnamon because it contains compounds that can be toxic to the liver and kidneys if you overconsume it.
Research show that consuming 1, 3, or 6 grams of cinnamon daily for 40 days in people with type 2 diabetes lowers the LDL bad cholesterol,total cholesterol and triglycerides. People with diabetes who consume cinnamon will also need to monitor their bloodsugar carefully because cinnamon can intensify the properties of insulin medication. This meta analysis also show cinnamon lower the LDL “bad cholesterol” and raise the HDL good cholesterol.

How much cinnamon to consume
According to Cleveland Clinic it is safe to use 1 to 4 grams cinnamon daily. Because scientist still didnt tested the properties of high intake of cinnamon it is belived that high amount could actually be toxic. The cassia cinnamon also contains high amount of chemical called coumarin,which can affect negativly people that are sensitive to coumarin(especially those who have problems with liver). You can use it in your coffee,tea,smoothie or soap.My favourite use of it is in my oatmeal. I personally use this organic cinnamon.
